Brisket is a very popular cut of beef that is often slow-smoked or grilled to perfection. Many grill masters (me included!) use a variety of spray ingredients during the cooking process to keep the brisket moist and flavorful. These ingredients can help to enhance the flavor, tenderize the meat, and keep it moist.

Let’s explore some of the most popular brisket spray ingredients and explain their benefits.

  1. Apple Cider Vinegar: This is a common ingredient in brisket sprays because it helps to tenderize the meat. The acidity of the vinegar breaks down the tough fibers in the brisket which makes it more tender and juicy. Apple cider vinegar also adds a tangy flavor to the meat that pairs well with the smokiness of the grill… and just tastes great overall. I highly recommend trying this one.

  2. Apple Juice: This is another popular ingredient in brisket sprays that adds sweetness to the meat. The sugar in the apple juice caramelizes during cooking. This caramelization  creates a delicious crust on the outside of the brisket. As with all of the sprays, apple juice helps to keep the meat moist and tender.

  3. Beer: Many grill masters use beer in their brisket sprays for its unique flavor profile. The malt and hops in the beer can add a slightly bitter, nutty flavor to the meat. This is usually a big hit with your primary brisket consuming audience: men.

  4. Beef Broth: This is a classic ingredient in brisket sprays that adds a rich, meaty flavor to the meat. Beef broth is made from beef bones and meat (duh?) so it is packed with flavor. 

  5. Melted Butter: This is a decadent ingredient that can add richness and flavor to your brisket. Butter is high in fat, so it can help to keep the meat moist and juicy. It also adds a slightly sweet and nutty flavor to the meat.

  6. Plain Water: While some grill masters prefer to use flavorful liquids in their brisket sprays, others opt for plain water. This can be a bit controversial because a lot of pitmasters would argue that if you are going to use a spray – you should at least use one with flavor. I’m kind of in-between both camps because plain water will make it better, even though I would prefer apple cider vinegar or beer. 

  7. Worcestershire Sauce: This is a versatile ingredient that can add a complex and good savory flavor to your brisket. Worcestershire sauce is made from a blend of spices, vinegar, and molasses, so it has a sweet and tangy flavor. It also contains umami-rich ingredients like anchovies and soy sauce, which can enhance the meaty flavor of the brisket.
